Maple Bacon Birthday Cake

This morning I got up and decided to make a cake for Sofia's birthday celebration adventure at Beer Table.  I announced to Todd that I was going to make a Maple Bacon birthday cake and perused the Joy of Cooking for a suitable cake to start with.  We decided to go with a variation on the Lady Cake, a white cake recipe with almond extract and lemon (but we skipped the lemon because it didn't seem like a good complement to maple or bacon) and further modified the recipe by using my favorite flour:  Bob's Red Mill whole wheat pastry flour.
For frosting I tried a cream cheese frosting which turned out to be more liquid than I wanted, but maybe that was because I had to use all the maple syrup in the house to make it maple-y enough. For the bacon portion of the cake we used a recipe recommended by Jess for spicy caramelized bacon involving red pepper flakes and brown sugar.
We managed not to eat all the delicious bacon and used the little pieces for the filling layer and the pretty pieces for the top.
Buddy was not interested in the kitchen when is smelled like baking cake, but as soon as the house started to smell like bacon he and Dakota hovered in the kitchen hoping something would fall on the floor, or better yet, into their mouths. 
The result was a deliciously moist slightly almond-y cake with gooey maple frosting and slightly spicy bacon accents.  The red pepper really made the whole thing some together and preventing it from being too sweet.
